THE CHIPOTLE PORK-CLUSTERS

Ingredients
- 600g Pork shoulder (minced or finely diced)
- 2 Red onions (pureed)
- 2 cloves Garlic
- 2 tbsp Chipotle paste
- 1 tsp Cumin seeds
- 100ml Orange juice
- 1 tbsp Honey
Cooking Method
- The Scorch Fry pork in its own fat on high heat until dark brown and crispy; remove.
- The Architect Fry onion puree in the pork fat until it turns into a sweet, dark jam.
- The Bloom Add chipotle paste and cumin with a 30ml splash of juice to release the smoky oils.
- The Marriage Return pork to the pan; add remaining orange juice and honey. Simmer for 10 minutes until the sauce reduces to a thick red lacquer.
- The Final Flourish Top with raw fresh onion rings and a massive hit of raw fresh coriander.
