THE CHIPOTLE PORK-CLUSTERS

Ingredients: 600g Pork shoulder (minced or finely diced), 2 Red onions (pureed), 2 cloves Garlic, 2 tbsp Chipotle paste, 1 tsp Cumin seeds, 100ml Orange juice, 1 tbsp Honey...

  • 600g Pork shoulder (minced or finely diced)
  • 2 Red onions (pureed)
  • 2 cloves Garlic
  • 2 tbsp Chipotle paste
  • 1 tsp Cumin seeds
  • 100ml Orange juice
  • 1 tbsp Honey

Cooking Method

  1. The Scorch Fry pork in its own fat on high heat until dark brown and crispy; remove.
  2. The Architect Fry onion puree in the pork fat until it turns into a sweet, dark jam.
  3. The Bloom Add chipotle paste and cumin with a 30ml splash of juice to release the smoky oils.
  4. The Marriage Return pork to the pan; add remaining orange juice and honey. Simmer for 10 minutes until the sauce reduces to a thick red lacquer.
  5. The Final Flourish Top with raw fresh onion rings and a massive hit of raw fresh coriander.
