Ingredients: 500g Pork loin (thinly sliced), 1 tbsp Chipotle paste, 1 tsp Dried Thyme, 1 tsp Cumin, 1 Large onion (sliced), 2 cloves Garlic, 4 Flour tortillas (or pitas)...

Ingredients

  • 500g Pork loin (thinly sliced)
  • 1 tbsp Chipotle paste
  • 1 tsp Dried Thyme
  • 1 tsp Cumin
  • 1 Large onion (sliced)
  • 2 cloves Garlic
  • 4 Flour tortillas (or pitas)

Cooking Method

  1. The Scorch High-heat stir-fry pork and onions in oil until charred and blackened at the edges.
  2. The Bloom Add garlic and spices with a 30ml splash of water; the steam will release the thyme and chipotle perfume.
  3. The Marriage Toss until the liquid evaporates and the spices lacquer the meat.
  4. The Assembly Place the pork and onions on warm tortillas.
  5. The Final Flourish Serve with a raw hit of fresh lime and a spicy chipotle-yogurt silk.
