THE CHIPOTLE PORK-CLOUDS
(Our Play on Tacos Árabes - Mexican Style)

- 500g Pork loin (thinly sliced)
- 1 tbsp Chipotle paste
- 1 tsp Dried Thyme
- 1 tsp Cumin
- 1 Large onion (sliced)
- 2 cloves Garlic
- 4 Flour tortillas (or pitas)
Cooking Method
- The Scorch High-heat stir-fry pork and onions in oil until charred and blackened at the edges.
- The Bloom Add garlic and spices with a 30ml splash of water; the steam will release the thyme and chipotle perfume.
- The Marriage Toss until the liquid evaporates and the spices lacquer the meat.
- The Assembly Place the pork and onions on warm tortillas.
- The Final Flourish Serve with a raw hit of fresh lime and a spicy chipotle-yogurt silk.
