THE CHIPOTLE-LACQUER SLABS
(Our Play on Smoky Pork Chops)

- 1 tbsp Chipotle paste
- 1 tsp Garlic powder
- 1 tsp Dried Oregano
- 2 tbsp Honey
- 1 tbsp Apple cider vinegar
- 2 tbsp Oil
- 1 tsp Salt
Cooking Method
- The Coat Whisk chipotle, honey, vinegar, and spices with a tiny 10ml splash of water to form a thick red lacquer; rub onto pork.
- The Scorch Fry pork in oil on high heat for 5 minutes per side until the honey chars and edges are blackened.
- The Bloom Add a 20ml splash of water to the pan for the last minute; the steam will release the sticky glaze from the pan bottom.
- The Marriage Toss the chops in the bubbling silk until heavily coated.
- The Final Flourish Finish with a squeeze of raw lime and fresh coriander.
