THE CHIPOTLE-GRAIN CHILAQUILES

- 2 tbsp Chipotle paste
- 200g Tomato passata
- 2 Eggs (fried)
- 100g Black beans
- Sour cream
- Fresh Avocado
- Coriander
Cooking Method
- The Bloom Whisk chipotle and passata in a pan with a 30ml splash of water; boil for 2 minutes to release the smoke.
- The Swell Add black beans; simmer for 3 minutes until bubbling.
- The Marriage Toss the chips in the smoky silk for 30 seconds until coated but crunchy.
- The Assembly Place onto a plate; top with the fried eggs.
- The Final Flourish Finish with a massive hit of raw avocado and fresh coriander.
