THE CHIPOTLE-GRAIN CHILAQUILES

Ingredients: 200g Tortilla chips, 2 tbsp Chipotle paste, 200g Tomato passata, 2 Eggs (fried), 100g Black beans, Sour cream, Fresh Avocado, Coriander...

  • 200g Tortilla chips
  • 2 tbsp Chipotle paste
  • 200g Tomato passata
  • 2 Eggs (fried)
  • 100g Black beans
  • Sour cream
  • Fresh Avocado
  • Coriander

Cooking Method

  1. The Bloom Whisk chipotle and passata in a pan with a 30ml splash of water; boil for 2 minutes to release the smoke.
  2. The Swell Add black beans; simmer for 3 minutes until bubbling.
  3. The Marriage Toss the chips in the smoky silk for 30 seconds until coated but crunchy.
  4. The Assembly Place onto a plate; top with the fried eggs.
  5. The Final Flourish Finish with a massive hit of raw avocado and fresh coriander.
