THE CHIPOTLE CABBAGE CLUSTERS
(Our Play on Balkan Sautéed Cabbage with Mexican Fire)
Ingredients: 1 Green cabbage (shredded thin), 1 tbsp Chipotle paste, 1 tsp Smoked paprika, 1 tsp Salt, 50ml Olive oil, 1 tbsp Honey, 1 tbsp Cider vinegar, 1 Red onion (minced), 100g Smoked Bacon (diced)...
Ingredients
- 1 Green cabbage (shredded thin)
- 1 tbsp Chipotle paste
- 1 tsp Smoked paprika
- 1 tsp Salt
- 50ml Olive oil
- 1 tbsp Honey
- 1 tbsp Cider vinegar
- 1 Red onion (minced)
- 100g Smoked Bacon (diced)
Cooking Method
- The Scorch Fry bacon and onion in oil until fat renders and they are charred; remove half the bacon.
- The Bloom Add chipotle and paprika to the hot fat with a tiny 15ml splash of vinegar; the hiss will release the smoky oils.
- The Marriage Add cabbage; toss on maximum heat for 10 minutes until wilted and charred at the edges.
- The Swell Drizzle with honey; toss for 1 minute until the cabbage is lacquered in the fire-silk.
- The Final Flourish Finish with the crispy bacon clusters and extra raw black pepper.
