THE CHIPOTLE CABBAGE CLUSTERS

Ingredients: 1 Green cabbage (shredded thin), 1 tbsp Chipotle paste, 1 tsp Smoked paprika, 1 tsp Salt, 50ml Olive oil, 1 tbsp Honey, 1 tbsp Cider vinegar, 1 Red onion (minced), 100g Smoked Bacon (diced)...

Ingredients

  • 1 Green cabbage (shredded thin)
  • 1 tbsp Chipotle paste
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 50ml Olive oil
  • 1 tbsp Honey
  • 1 tbsp Cider vinegar
  • 1 Red onion (minced)
  • 100g Smoked Bacon (diced)

Cooking Method

  1. The Scorch Fry bacon and onion in oil until fat renders and they are charred; remove half the bacon.
  2. The Bloom Add chipotle and paprika to the hot fat with a tiny 15ml splash of vinegar; the hiss will release the smoky oils.
  3. The Marriage Add cabbage; toss on maximum heat for 10 minutes until wilted and charred at the edges.
  4. The Swell Drizzle with honey; toss for 1 minute until the cabbage is lacquered in the fire-silk.
  5. The Final Flourish Finish with the crispy bacon clusters and extra raw black pepper.
