Ingredients: 600g Beef and Pork mince mix, 100g Kashkaval or Mozzarella (cubed small), 1 small onion (pureed), 1 tbsp Smoked paprika, 1 tsp Chili flakes, 1 tsp Salt, 2 tbsp Sparkling water, 1 tbsp Sunflower oil...

Ingredients

  • 600g Beef and Pork mince mix
  • 100g Kashkaval or Mozzarella (cubed small)
  • 1 small onion (pureed)
  • 1 tbsp Smoked paprika
  • 1 tsp Chili flakes
  • 1 tsp Salt
  • 2 tbsp Sparkling water
  • 1 tbsp Sunflower oil

Cooking Method

  1. The Build Knead the meat with onion puree and spices.
  2. The Bloom Slowly incorporate the sparkling water; the bubbles will carry the paprika oils into the meat architecture.
  3. The Shape Form into two thin patties; place cheese cubes in the center and seal with a second patty over the top.
  4. The Scorch Grill on white-hot heat for 6 minutes per side until the exterior is blackened and charred and the center is molten.
  5. The Final Flourish Serve with raw white onion rings and a hit of raw parsley.
