THE CHEESE-STUFFED SLAB

Ingredients
- 600g Beef and Pork mince mix
- 100g Kashkaval or Mozzarella (cubed small)
- 1 small onion (pureed)
- 1 tbsp Smoked paprika
- 1 tsp Chili flakes
- 1 tsp Salt
- 2 tbsp Sparkling water
- 1 tbsp Sunflower oil
Cooking Method
- The Build Knead the meat with onion puree and spices.
- The Bloom Slowly incorporate the sparkling water; the bubbles will carry the paprika oils into the meat architecture.
- The Shape Form into two thin patties; place cheese cubes in the center and seal with a second patty over the top.
- The Scorch Grill on white-hot heat for 6 minutes per side until the exterior is blackened and charred and the center is molten.
- The Final Flourish Serve with raw white onion rings and a hit of raw parsley.
