THE CHEESE-SPIRAL CRUST
(Our Play on Bulgarian Banitsa)
Ingredients: 10 sheets Phyllo pastry, 100g Butter (melted), 300g Feta (crumbled), 200ml Yogurt, 3 Eggs, 1 tsp Salt, 1 tsp White pepper...
Ingredients
- 10 sheets Phyllo pastry
- 100g Butter (melted)
- 300g Feta (crumbled)
- 200ml Yogurt
- 3 Eggs
- 1 tsp Salt
- 1 tsp White pepper
Cooking Method
- The Bloom Whisk eggs and yogurt with the spices; add a tiny 10ml splash of warm water to help the cheese oils integrate.
- The Silk Merge Fold in the Feta until it forms a chunky, lumpy yellow silk.
- The Build Brush a phyllo sheet with butter; spread 2 tbsp of cheese silk. Roll into a long snake.
- The Shape Coil the snake in a round pan; repeat with all sheets until the pan is full.
- The Bake Roast at 200°C for 30 minutes until the top is rock-hard golden and charred.
- The Final Flourish Brush with raw butter while hot; serve with cold yogurt.
