THE CHEESE-SPIRAL CRUST

Ingredients: 10 sheets Phyllo pastry, 100g Butter (melted), 300g Feta (crumbled), 200ml Yogurt, 3 Eggs, 1 tsp Salt, 1 tsp White pepper...

Ingredients

  • 10 sheets Phyllo pastry
  • 100g Butter (melted)
  • 300g Feta (crumbled)
  • 200ml Yogurt
  • 3 Eggs
  • 1 tsp Salt
  • 1 tsp White pepper

Cooking Method

  1. The Bloom Whisk eggs and yogurt with the spices; add a tiny 10ml splash of warm water to help the cheese oils integrate.
  2. The Silk Merge Fold in the Feta until it forms a chunky, lumpy yellow silk.
  3. The Build Brush a phyllo sheet with butter; spread 2 tbsp of cheese silk. Roll into a long snake.
  4. The Shape Coil the snake in a round pan; repeat with all sheets until the pan is full.
  5. The Bake Roast at 200°C for 30 minutes until the top is rock-hard golden and charred.
  6. The Final Flourish Brush with raw butter while hot; serve with cold yogurt.
