- 300g Feta (crumbled)
- 200ml Sparkling water
- 1 tsp Black pepper
- 0.5 tsp Nutmeg
- 50g Butter (melted)
- 4 sheets Phyllo pastry
Cooking Method
- The Bloom Whisk eggs, sparkling water, and cheese; add the spices with a 10ml splash of warm milk to bloom the nutmeg.
- The Assembly Crumple phyllo sheets; drench them in the cheese silk and place in a buttered dish.
- The Bake Drizzle with remaining butter; roast at 200°C for 30 minutes until the cloud rises and the top is charred.
- The Final Flourish Serve with raw fresh tomatoes and extra virgin olive oil.
