Ingredients

  • 4 Eggs
  • 300g Feta (crumbled)
  • 200ml Sparkling water
  • 1 tsp Black pepper
  • 0.5 tsp Nutmeg
  • 50g Butter (melted)
  • 4 sheets Phyllo pastry

Cooking Method

  1. The Bloom Whisk eggs, sparkling water, and cheese; add the spices with a 10ml splash of warm milk to bloom the nutmeg.
  2. The Assembly Crumple phyllo sheets; drench them in the cheese silk and place in a buttered dish.
  3. The Bake Drizzle with remaining butter; roast at 200°C for 30 minutes until the cloud rises and the top is charred.
  4. The Final Flourish Serve with raw fresh tomatoes and extra virgin olive oil.
