THE CHARRED STREET SKEWER
(Our Play on Paneer Shashlik)
Ingredients: 400g Paneer (large cubes), 1 Onion (petals), 1 Red pepper (chunks), 1 Green pepper (chunks), 100g Greek yogurt, 1 tbsp Ginger-garlic paste, 1 tsp Mustard oil, 1 tsp Turmeric, 1 tsp Chili powder, 1 tsp Garam Masala...
Ingredients
- 400g Paneer (large cubes)
- 1 Onion (petals)
- 1 Red pepper (chunks)
- 1 Green pepper (chunks)
- 100g Greek yogurt
- 1 tbsp Ginger-garlic paste
- 1 tsp Mustard oil
- 1 tsp Turmeric
- 1 tsp Chili powder
- 1 tsp Garam Masala
Cooking Method
- The Coat Whisk yogurt and spices into a thick marinade; toss paneer and veg to coat every surface.
- The Rest Let the skewers chill for 20 minutes to allow the spices to grip.
- The Scorch Grill or pan-fry on very high heat until the edges of the veg and paneer are blackened and charred.
- The Final Flourish Dust with Chaat Masala and a hit of fresh lemon juice.
