- 8 Whole Fresh Sardines
- 3 tbsp Coarse Sea Salt
- 1 tsp Dried Oregano
- 1 tsp Black pepper
- 60ml Extra virgin olive oil
- 1 Lemon (juiced)
Cooking Method
- The Coat Rub sardines heavily with coarse salt; let sit for 10 minutes.
- The Scorch Grill on maximum heat (ideally charcoal) for 3 minutes per side until the skin is blackened and blistered.
- The Bloom Whisk oil, lemon juice, and spices with a tiny 10ml splash of water; the moisture will swell the oregano oils.
- The Marriage Drizzle the herb-silk over the hot charred fins.
- The Final Flourish Serve on a slice of raw rustic bread to soak up the juices.
