Ingredients: 8 Whole Fresh Sardines, 3 tbsp Coarse Sea Salt, 1 tsp Dried Oregano, 1 tsp Black pepper, 60ml Extra virgin olive oil, 1 Lemon (juiced)...

Ingredients

  • 8 Whole Fresh Sardines
  • 3 tbsp Coarse Sea Salt
  • 1 tsp Dried Oregano
  • 1 tsp Black pepper
  • 60ml Extra virgin olive oil
  • 1 Lemon (juiced)

Cooking Method

  1. The Coat Rub sardines heavily with coarse salt; let sit for 10 minutes.
  2. The Scorch Grill on maximum heat (ideally charcoal) for 3 minutes per side until the skin is blackened and blistered.
  3. The Bloom Whisk oil, lemon juice, and spices with a tiny 10ml splash of water; the moisture will swell the oregano oils.
  4. The Marriage Drizzle the herb-silk over the hot charred fins.
  5. The Final Flourish Serve on a slice of raw rustic bread to soak up the juices.
