THE CHARRED SAUSAGE GRAINS

Ingredients: 200g Chouriço (thick slices), 300g Carolino rice, 1 tsp Smoked paprika, 1 tsp Garlic powder, 2 Bay leaves, 700ml Chicken stock, 1 tbsp White wine vinegar...

Ingredients

  • 200g Chouriço (thick slices)
  • 300g Carolino rice
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 2 Bay leaves
  • 700ml Chicken stock
  • 1 tbsp White wine vinegar

Cooking Method

  1. The Scorch Fry chouriço until the red fat renders and it turns rock-hard crispy; remove.
  2. The Bloom Add rice, spices, and bay leaves to the hot fat; toast for 1 minute with a 30ml splash of stock to release the oils.
  3. The Swell Add remaining stock; cover and simmer for 15 minutes until tender.
  4. The Marriage Stir in the vinegar and return chouriço; the acid will lift the smoky fat.
  5. The Final Flourish Top with raw fresh parsley and extra black pepper.
