THE CHARRED SAUSAGE GRAINS
(Our Play on Steamed Rice with Chouriço)

- 200g Chouriço (thick slices)
- 300g Carolino rice
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 2 Bay leaves
- 700ml Chicken stock
- 1 tbsp White wine vinegar
Cooking Method
- The Scorch Fry chouriço until the red fat renders and it turns rock-hard crispy; remove.
- The Bloom Add rice, spices, and bay leaves to the hot fat; toast for 1 minute with a 30ml splash of stock to release the oils.
- The Swell Add remaining stock; cover and simmer for 15 minutes until tender.
- The Marriage Stir in the vinegar and return chouriço; the acid will lift the smoky fat.
- The Final Flourish Top with raw fresh parsley and extra black pepper.
