THE CHARRED SAUSAGE GRAINS
(Our Play on Arroz de Chouriço)
Ingredients: 200g Chouriço (sliced), 300g Carolino or Long-grain rice, 1 Onion (diced), 2 cloves Garlic, 1 Carrot (minced), 1 tsp Smoked paprika, 1 tsp Black pepper, 700ml Chicken stock, 1 tbsp Wine vinegar...
Ingredients
- 200g Chouriço (sliced)
- 300g Carolino or Long-grain rice
- 1 Onion (diced)
- 2 cloves Garlic
- 1 Carrot (minced)
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 700ml Chicken stock
- 1 tbsp Wine vinegar
Cooking Method
- The Scorch Fry chouriço until the fat renders and the meat is rock-hard crispy; remove.
- The Architect Sauté onion, carrot, and garlic in the red fat until soft.
- The Bloom Add rice, paprika, and pepper with a 30ml splash of stock; toast for 1 minute to release the oils.
- The Swell Add remaining stock; cover and simmer for 15 minutes until liquid is absorbed.
- The Marriage Return chouriço; stir in vinegar to sharpen the fat.
- The Final Flourish Top with a massive hit of raw fresh parsley and extra black pepper.
