Ingredients

  • 500g Cooked Octopus tentacles
  • 500g Baby Potatoes
  • 10 cloves Garlic (smashed)
  • 1 tsp Smoked paprika
  • 1 tsp Coarse Sea Salt
  • 200ml Extra virgin olive oil

Cooking Method

  1. The Swell Boil potatoes until soft; 'punch' each one to flatten it.
  2. The Scorch Roast octopus, potatoes, and garlic at 220°C in the oil until rock-hard charred.
  3. The Bloom Add paprika to the hot pan oil with a 15ml splash of water; the sizzle will release the smoke.
  4. The Marriage Toss everything until the red garlic-oil lacquers the reef.
  5. The Final Flourish Finish with a massive hit of raw fresh parsley.
