- 200g Fideo noodles (or broken vermicelli)
- 1 small onion (pureed)
- 2 cloves Garlic
- 1 tsp Cumin
- 1 tsp Chili powder
- 200g Tomato passata
- 200ml Chicken stock
Cooking Method
- The Scorch Fry dry noodles in oil on high heat until they turn dark mahogany and smell like roasted nuts.
- The Architect Add onion puree and garlic; sauté until the moisture is gone and it smells sweet.
- The Bloom Add spices with a 30ml splash of stock; the steam will release the cumin oils.
- The Swell Add remaining stock and passata; simmer uncovered for 8 minutes until all liquid is absorbed and noodles are soft but dry.
- The Final Flourish Top with raw feta crumbles, avocado slices, and a hit of raw lime.
