- 250g Padrón peppers (whole)
- 3 tbsp Extra virgin olive oil
- 1 tbsp Coarse Sea Salt
- Lemon zest
Cooking Method
- The Scorch Heat oil in a wide pan until smoking; add peppers in a single layer.
- The Char Fry on maximum heat for 4 minutes, tossing only occasionally, until the skins are blistered and blackened.
- The Bloom Add a tiny 5ml splash of water to the pan; the sudden steam will soften the skins slightly while the salt adheres.
- The Final Flourish Finish with a heavy rain of raw sea salt and a hit of lemon zest.
