THE CHARRED COTTAGE BLOCK
(Our Play on Paneer Tikka)
Ingredients: 400g Paneer (large cubes), 1 Red onion (petals), 1 Green bell pepper (chunks), 100g Greek yogurt, 1 tbsp Ginger-garlic paste, 1 tsp Ajwain seeds, 1 tsp Turmeric, 1 tsp Smoked paprika, 1 tsp Garam masala...
Ingredients
- 400g Paneer (large cubes)
- 1 Red onion (petals)
- 1 Green bell pepper (chunks)
- 100g Greek yogurt
- 1 tbsp Ginger-garlic paste
- 1 tsp Ajwain seeds
- 1 tsp Turmeric
- 1 tsp Smoked paprika
- 1 tsp Garam masala
Cooking Method
- The Coat Whisk yogurt and spices; toss in paneer and veg until fully coated.
- Chill Rest in the fridge for 30 minutes to let the spices penetrate the block.
- The Scorch Thread onto skewers and sear in a high-heat pan or under a 220°C grill for 8 minutes.
- The Char Turn every 2 minutes until the edges are blackened and the paneer is soft.
- The Finish Dust with Chaat Masala and a squeeze of fresh lime.
