(Our Play on Gobi Masala)

- 1 Medium head of cauliflower (small florets)
- 1 tsp Turmeric
- 1 tsp Amchur
- 1 tsp Cumin powder
- 1 tsp Garam Masala
- 1 tbsp Ginger (grated)
- 2 Green chilies
- 1 tsp Butter
- Fresh coriander
Cooking Method
- The Dry Scorch Fry florets in hot oil for 3 minutes without moving to get a dark char.
- The Bloom Sprinkle spices over veg with a tiny 20ml splash of water to stick without mush.
- The Butter Toss in butter at the end for a restaurant-style gloss.
- The Final Flourish Garnish with fresh coriander and lemon.
