THE CARDAMOM FRUIT-CRUST
(Our Play on Greek Baklava with Cardamom)

- 12 sheets Phyllo pastry
- 200g Butter (melted)
- 400g Pistachios (ground)
- 2 tsp Cardamom
- 1 tsp Cinnamon
- 200ml Honey
- 100ml Orange juice
- 1 tsp Vanilla
Cooking Method
- The Build Layer phyllo and butter; add spiced pistachios every 3 layers.
- The Scorch Cut into diamonds; roast at 180°C for 40 minutes until rock-hard golden charred.
- The Bloom Boil honey, juice, and vanilla; add a tiny 10ml splash of hot syrup to the remaining cardamom to release the perfume.
- The Marriage Pour the hot cardamom silk over the cold baklava layers.
- The Final Flourish Top with raw crushed pistachios and a pinch of raw cardamom.
