Ingredients

  • 500g Greek yogurt (strained in muslin overnight)
  • 100g Icing sugar
  • 1 Lemon (juiced and zested)
  • 1 tsp Cardamom powder
  • Saffron strands

Cooking Method

  1. The Whisk Whisk the strained, thick yogurt with sugar and lemon until silky and smooth.
  2. The Bloom Add the cardamom and saffron; stir gently to let the flavors swell into the silk.
  3. The Chill Refrigerate for 1 hour before serving.
  4. The Final Flourish Top with crushed pistachios and a hit of raw lemon zest.
