- 500g Greek yogurt (strained in muslin overnight)
- 100g Icing sugar
- 1 Lemon (juiced and zested)
- 1 tsp Cardamom powder
- Saffron strands
Cooking Method
- The Whisk Whisk the strained, thick yogurt with sugar and lemon until silky and smooth.
- The Bloom Add the cardamom and saffron; stir gently to let the flavors swell into the silk.
- The Chill Refrigerate for 1 hour before serving.
- The Final Flourish Top with crushed pistachios and a hit of raw lemon zest.
