THE CARAWAY-CHARRED LEAVES
(Our Play on Cabbage with Bacon and Caraway)

Ingredients
- 1 small Green cabbage (shredded)
- 100g Bacon lardons
- 1 tsp Caraway seeds
- 1 tsp Black pepper
- 50g Butter
- 1 tbsp Sherry vinegar
Cooking Method
- The Scorch Fry bacon until rock-hard and crispy; remove most fat.
- The Architect Add butter and caraway seeds to the pan until they start to pop.
- The Bloom Add pepper and a 20ml splash of vinegar; the steam will release the earthy spice oils.
- The Marriage Add cabbage; toss on high heat for 10 minutes until soft and blackened at the edges.
- The Final Flourish Top with raw bacon bits and a heavy grating of raw black pepper.
