THE CAPER-LACQUER MARINE
(Our Play on Spanish Cod with Capers & Olives)

Ingredients
- 2 Cod fillets (approx. 400g total)
- 2 cloves Garlic (sliced)
- 50g Green olives
- 2 tbsp Capers
- 1 tsp Dried Oregano
- 1 tsp Smoked paprika
- 200g Cherry tomatoes (halved)
- 50ml Dry Sherry
Cooking Method
- The Scorch Sear the fish in oil on high heat for 3 minutes per side until charred; remove.
- The Architect In the same pan, sauté garlic, olives, and capers until fragrant.
- The Bloom Add oregano and paprika with a 20ml splash of sherry to release the aromatic oils.
- The Swell Add tomatoes and remaining sherry; boil for 5 minutes until the tomatoes burst into a silk.
- The Marriage Return the fish to the pan for 1 minute to lacquer in the sauce.
- The Final Flourish Finish with a massive hit of raw parsley and a squeeze of lemon.
