Ingredients: 2 Cod fillets (approx. 400g total), 2 cloves Garlic (sliced), 50g Black olives, 2 tbsp Capers, 1 tsp Dried Oregano, 1 tsp Chili flakes, 200g Cherry tomatoes (halved), 50ml White wine...

Ingredients

  • 2 Cod fillets (approx. 400g total)
  • 2 cloves Garlic (sliced)
  • 50g Black olives
  • 2 tbsp Capers
  • 1 tsp Dried Oregano
  • 1 tsp Chili flakes
  • 200g Cherry tomatoes (halved)
  • 50ml White wine

Cooking Method

  1. The Scorch Sear the fish in oil on high heat for 3 minutes per side until charred; remove.
  2. The Architect In the same pan, sauté garlic, olives, and capers until fragrant.
  3. The Bloom Add oregano and chili with a 20ml splash of wine to release the aromatic oils.
  4. The Swell Add tomatoes and remaining wine; boil for 5 minutes until the tomatoes burst into a silk.
  5. The Marriage Return the fish to the pan for 1 minute to lacquer in the sauce.
  6. The Final Flourish Finish with a massive hit of raw parsley and a squeeze of lemon.
