THE BLUE-STUNG SQUASH
(Our Play on Roasted Butternut Squash with Gorgonzola)

Ingredients
- 1 Butternut squash (cubed)
- 1 tsp Chili flakes
- 1 tsp Black pepper
- 100g Gorgonzola (crumbled)
- 3 tbsp Olive oil
- 1 tbsp Honey
Cooking Method
- The Mix Toss squash with oil and spices in a large bowl.
- The Bloom Add a 15ml splash of water to the bowl; this helps the spices 'swell' and stick to the squash skins.
- The Scorch Roast at 200°C for 25 minutes until the edges are blackened and charred.
- The Marriage Top with crumbled gorgonzola and honey while still hot from the oven; the cheese should melt into a silk.
- The Final Flourish Top with raw fresh sage and toasted pumpkin seeds.
