  • 500g Fresh Gnocchi
  • 200g Fresh Spinach
  • 100g Valdeón (Blue cheese)
  • 100ml Double cream
  • 1 tsp Black pepper
  • 0.5 tsp Nutmeg

Cooking Method

  1. The Wilt Blanch spinach for 30 seconds; squeeze dry and chop.
  2. The Bloom Heat cream and spices with a 20ml splash of pasta water to release the perfume.
  3. The Marriage Add blue cheese; whisk until it vanishes into a thick blue silk. Fold in the spinach.
  4. The Silk Merge Toss the cooked gnocchi through the sauce until every pillow is coated.
  5. The Final Flourish Top with raw fresh sage and a final dust of nutmeg.
