(Our Play on Gnocchi with Spinach and Gorgonzola)

Ingredients
- 500g Fresh Gnocchi
- 200g Fresh Spinach
- 100g Gorgonzola
- 100ml Double cream
- 1 tsp Black pepper
- 0.5 tsp Nutmeg
Cooking Method
- The Wilt Blanch spinach for 30 seconds; squeeze dry and chop.
- The Bloom Heat cream and spices with a 20ml splash of pasta water to release the perfume.
- The Marriage Add gorgonzola; whisk until it vanishes into a thick blue silk. Fold in the spinach.
- The Silk Merge Toss the cooked gnocchi through the sauce until every pillow is coated.
- The Final Flourish Top with raw fresh sage and a final dust of nutmeg.
