THE BLACK-GOLD TOFU
(Our Play on Black Pepper Tofu)
Ingredients: 400g Firm Tofu (cubed), 2 tbsp Black peppercorns (coarsely crushed), 2 tbsp Dark soy sauce, 1 tbsp Sugar, 1 tbsp Butter, 1 Red onion (petals), 3 Spring onions (cut into batons)...
Ingredients
- 400g Firm Tofu (cubed)
- 2 tbsp Black peppercorns (coarsely crushed)
- 2 tbsp Dark soy sauce
- 1 tbsp Sugar
- 1 tbsp Butter
- 1 Red onion (petals)
- 3 Spring onions (cut into batons)
Cooking Method
- The Scorch Fry tofu cubes in oil until crispy and golden; remove.
- The Architect In the same pan, sauté onions until the edges are charred.
- The Bloom Add pepper, soy, and sugar with a tiny splash of water to form a dark lacquer.
- The Marriage Toss the tofu and spring onions back in with the butter; stir until glistening.
