THE BLACK-GOLD COTTAGE
(Our Play on Black Pepper Tofu)

- 400g Firm Tofu (cubed)
- 2 tbsp Black peppercorns (coarsely crushed)
- 1 Red onion (petals)
- 1 Green pepper (petals)
- 2 tbsp Dark soy sauce
- 1 tbsp Brown sugar
- 1 tbsp Butter
Cooking Method
- The Scorch Fry tofu cubes in 2 tbsp oil until the edges are golden and crispy; remove.
- The Architect Sauté onions and peppers on max heat until charred but still crunchy.
- The Bloom Add pepper, soy, and sugar with a 25ml splash of water to form a dark, peppery syrup.
- The Marriage Toss the tofu and veg back in with the butter until the sauce is a thick lacquer.
- The Finish Garnish with fresh spring onion matchsticks.
