(Our Play on South Indian Black Pepper Fish)
Ingredients: 2 Cod fillets (approx 350g total), 2 tbsp Black peppercorns (coarsely crushed), 1 tsp Fennel seeds, 1 tsp Turmeric, 1 tsp Salt, 1 tbsp Ginger-garlic paste, Fresh lime, 10 Curry leaves...

- 2 tbsp Black peppercorns (coarsely crushed)
- 1 tsp Fennel seeds
- 1 tsp Turmeric
- 1 tsp Salt
- 1 tbsp Ginger-garlic paste
- Fresh lime
- 10 Curry leaves
Cooking Method
- The Coat Rub ginger-garlic and turmeric into the fish; let rest for 5 minutes.
- The Scorch Heat oil until shimmering; sizzle fennel and curry leaves, then add the fish skin-side down.
- The Marriage Sprinkle the crushed pepper heavily over the fish; flip and sear until the crust is dark and spicy.
- The Final Flourish Serve with a final squeeze of lime juice to lift the heat.
