Ingredients: 500g Pork spare ribs (cut into 2cm pieces), 2 tbsp Fermented black beans (rinsed and smashed), 1 tbsp Garlic paste, 1 tbsp Soy sauce, 1 tbsp Rice wine, 1 tsp Sugar, 1 tbsp Cornflour...

Ingredients

  • 500g Pork spare ribs (cut into 2cm pieces)
  • 2 tbsp Fermented black beans (rinsed and smashed)
  • 1 tbsp Garlic paste
  • 1 tbsp Soy sauce
  • 1 tbsp Rice wine
  • 1 tsp Sugar
  • 1 tbsp Cornflour

Cooking Method

  1. The Coat Toss ribs in cornflour, silk ingredients, and the black bean fire mix.
  2. The Bloom Add a tiny 15ml splash of water to the marinade to ensure the beans release their salty essence.
  3. The Steam Arrange in a single layer and steam for 18 minutes until tender and glistening.
  4. The Final Flourish Finish with fresh red chili slices and spring onions.
