THE BLACK-BEAN WHIP
(Our Play on Chinese Steamed Pork Ribs with Black Beans)

Ingredients
- 500g Pork spare ribs (cut into 2cm pieces)
- 2 tbsp Fermented black beans (rinsed and smashed)
- 1 tbsp Garlic paste
- 1 tbsp Soy sauce
- 1 tbsp Rice wine
- 1 tsp Sugar
- 1 tbsp Cornflour
Cooking Method
- The Coat Toss ribs in cornflour, silk ingredients, and the black bean fire mix.
- The Bloom Add a tiny 15ml splash of water to the marinade to ensure the beans release their salty essence.
- The Steam Arrange in a single layer and steam for 18 minutes until tender and glistening.
- The Final Flourish Finish with fresh red chili slices and spring onions.
