THE BEER-STUNG STACK
(Our Play on Francesinha - Quick Sauce Edit)
Ingredients: 2 Slices of bread, 1 Steak (thin), 1 sausage (sliced), 2 slices Ham, 4 slices Cheese, 1 tbsp Piri-Piri flakes, 1 tsp Smoked paprika, 300ml Beer, 50ml Brandy, 100ml Tomato passata...

- 1 Steak (thin)
- 1 sausage (sliced)
- 2 slices Ham
- 4 slices Cheese
- 1 tbsp Piri-Piri flakes
- 1 tsp Smoked paprika
- 300ml Beer
- 50ml Brandy
- 100ml Tomato passata
- 1 tbsp Cornflour
Cooking Method
- The Scorch Sear the steak and sausage on high heat until charred; assemble the sandwich stack with ham and cheese.
- The Bloom In a pot, whisk beer, brandy, passata, and spices with a tiny 15ml splash of water; boil for 2 minutes to release the spirit aromatics.
- The Swell Whisk in cornflour slurry; simmer until the sauce is a thick, glowing fire-silk.
- The Marriage Pour the boiling silk over the sandwich until the cheese melts into a lava flow.
- The Final Flourish Top with a raw fried egg and serve with a hit of raw chili oil.
