Ingredients: 300g Cooked Jasmine rice (cold), 200g Chicken mince or diced Tofu, 3 Red chilies (smashed), 4 cloves Garlic (minced), 1 tbsp Oyster sauce, 1 tbsp Soy sauce, Handful of fresh Basil...

Ingredients

  • 300g Cooked Jasmine rice (cold)
  • 200g Chicken mince or diced Tofu
  • 3 Red chilies (smashed)
  • 4 cloves Garlic (minced)
  • 1 tbsp Oyster sauce
  • 1 tbsp Soy sauce
  • Handful of fresh Basil

Cooking Method

  1. The Scorch Fry garlic and chilies in oil until they are dark golden and sharp.
  2. The Sear Add protein; stir-fry on high heat until sealed and browned.
  3. The Bloom Add the cold rice and silk sauces with a tiny 15ml splash of water to steam the grains.
  4. The Marriage Toss in the basil; stir-fry on max heat until the leaves wilt and the rice is 'dancing' in the pan.
  5. The Finish Serve with a squeeze of lime and raw cucumber on the side.
