THE BASIL FIRE-GRAINS
(Our Play on Thai Basil Fried Rice)

Ingredients
- 300g Cooked Jasmine rice (cold)
- 200g Chicken mince or diced Tofu
- 3 Red chilies (smashed)
- 4 cloves Garlic (minced)
- 1 tbsp Oyster sauce
- 1 tbsp Soy sauce
- Handful of fresh Basil
Cooking Method
- The Scorch Fry garlic and chilies in oil until they are dark golden and sharp.
- The Sear Add protein; stir-fry on high heat until sealed and browned.
- The Bloom Add the cold rice and silk sauces with a tiny 15ml splash of water to steam the grains.
- The Marriage Toss in the basil; stir-fry on max heat until the leaves wilt and the rice is 'dancing' in the pan.
- The Finish Serve with a squeeze of lime and raw cucumber on the side.
