- 4 Large Red onions (cut into thick petals)
- 1 tsp Chili flakes
- 1 tsp Smoked paprika
- 1 tsp Salt
- 2 tbsp Balsamic vinegar
- 1 tbsp Honey
- 3 tbsp Olive oil
Cooking Method
- The Scorch Fry onion petals in oil on maximum heat until the edges are blackened and charred.
- The Bloom Add spices with a 20ml splash of water; the steam will release the sweet onion sugars.
- The Marriage Add vinegar and honey; toss for 2 minutes until the liquid reduces to a thick black lacquer.
- The Final Flourish Finish with raw fresh thyme and a hit of lime.
