THE BALSAMIC LIVER SLABS
(Our Play on Balkan Fried Liver with an Italian Twist)

- 400g Lamb’s liver (thin slices)
- 1 tsp Black pepper
- 1 tsp Smoked paprika
- 2 cloves Garlic
- 2 tbsp Balsamic vinegar
- 1 tbsp Honey
- 50g Butter
Cooking Method
- The Scorch Fry liver in 1 tbsp oil on white-hot heat for 2 minutes per side until charred; remove.
- The Architect Melt butter in the same pan; sauté garlic until golden.
- The Bloom Add spices and honey with a 20ml splash of balsamic; the sudden hiss will release the meat sugars.
- The Marriage Return liver; toss for 30 seconds until lacquered in a thick dark silk.
- The Final Flourish Top with raw fresh parsley and extra black pepper.
