THE BALSAMIC GARDEN-SWELL
(Our Play on Ratatouille - DNA style)
Ingredients: 1 Eggplant, 2 Zucchini, 2 Red peppers (all cubed), 1 Onion (pureed), 3 cloves Garlic, 400g Tomato passata, 1 tsp Herbes de Provence, 1 tsp Chili flakes, 2 tbsp Balsamic vinegar, 3 tbsp Olive oil...
Ingredients
- 1 Eggplant
- 2 Zucchini
- 2 Red peppers (all cubed)
- 1 Onion (pureed)
- 3 cloves Garlic
- 400g Tomato passata
- 1 tsp Herbes de Provence
- 1 tsp Chili flakes
- 2 tbsp Balsamic vinegar
- 3 tbsp Olive oil
Cooking Method
- The Scorch Fry eggplant, zucchini, and peppers in oil until charred and blackened at the edges; remove.
- The Architect Fry onion puree in the pan until sweet and golden.
- The Bloom Add garlic and spices with a 30ml splash of stock to release the perfume.
- The Swell Add passata and vinegar; return the veg and simmer for 15 minutes until meltingly soft.
- The Final Flourish Finish with raw extra virgin olive oil and a hit of raw fresh basil.
