THE BALSAMIC FUNGAL-SWELL
(Our Play on Mushrooms with Balsamic & Thyme)

Ingredients
- 400g Button mushrooms (halved)
- 1 tsp Dried Thyme
- 1 tsp Black pepper
- 2 tbsp Balsamic vinegar
- 1 tbsp Honey
- 50g Butter
- 2 cloves Garlic (minced)
Cooking Method
- The Scorch Fry mushrooms in a dry pan on maximum heat until dark brown and charred.
- The Architect Add butter and garlic; sauté until golden.
- The Bloom Add thyme and pepper with a tiny 15ml splash of balsamic; the steam will release the woody aromatics.
- The Marriage Add remaining balsamic and honey; toss until it forms a thick, dark red lacquer.
- The Final Flourish Finish with a massive hit of raw fresh parsley.
