THE ATLANTIC GOLD-GRAINS

Ingredients: 300g Carolino or Arborio rice, 400g Mixed Seafood (Prawns, Mussels, Crab meat), 2 Red onions (pureed), 2 cloves Garlic, 2 Tomatoes (diced), 1 tsp Smoked paprika, 1 tsp Turmeric, 1 tsp Salt, 1L Fish stock, 50ml Brandy (optional)...

Ingredients

  • 300g Carolino or Arborio rice
  • 400g Mixed Seafood (Prawns, Mussels, Crab meat)
  • 2 Red onions (pureed)
  • 2 cloves Garlic
  • 2 Tomatoes (diced)
  • 1 tsp Smoked paprika
  • 1 tsp Turmeric
  • 1 tsp Salt
  • 1L Fish stock
  • 50ml Brandy (optional)

Cooking Method

  1. The Architect Sauté onions and garlic in olive oil until sweet; add tomatoes and cook until they melt into a pulp.
  2. The Scorch Add the rice; toast for 2 minutes until the grains are see-through.
  3. The Bloom Add spices and brandy with a 50ml splash of stock; the heat will bloom the golden oils into the starch.
  4. The Swell Add remaining stock; simmer uncovered, stirring occasionally. The rice should remain very wet and saucy ('malandrinho').
  5. The Marriage Toss in seafood during the last 6 minutes until cooked.
  6. The Final Flourish Finish with a massive hit of raw fresh coriander and extra lemon zest.
