THE ATLANTIC GOLD-GRAINS
(Our Play on Arroz de Marisco)
Ingredients: 300g Carolino or Arborio rice, 400g Mixed Seafood (Prawns, Mussels, Crab meat), 2 Red onions (pureed), 2 cloves Garlic, 2 Tomatoes (diced), 1 tsp Smoked paprika, 1 tsp Turmeric, 1 tsp Salt, 1L Fish stock, 50ml Brandy (optional)...
Ingredients
- 300g Carolino or Arborio rice
- 400g Mixed Seafood (Prawns, Mussels, Crab meat)
- 2 Red onions (pureed)
- 2 cloves Garlic
- 2 Tomatoes (diced)
- 1 tsp Smoked paprika
- 1 tsp Turmeric
- 1 tsp Salt
- 1L Fish stock
- 50ml Brandy (optional)
Cooking Method
- The Architect Sauté onions and garlic in olive oil until sweet; add tomatoes and cook until they melt into a pulp.
- The Scorch Add the rice; toast for 2 minutes until the grains are see-through.
- The Bloom Add spices and brandy with a 50ml splash of stock; the heat will bloom the golden oils into the starch.
- The Swell Add remaining stock; simmer uncovered, stirring occasionally. The rice should remain very wet and saucy ('malandrinho').
- The Marriage Toss in seafood during the last 6 minutes until cooked.
- The Final Flourish Finish with a massive hit of raw fresh coriander and extra lemon zest.
