- 300g Scallops
- 20g Fresh ginger (grated)
- 1 small Apple (minced)
- 50g Butter
- 1 Shallot (minced)
- 1 tsp White pepper
- 1 tsp Salt
- 50ml Dry Cider
Cooking Method
- The Scorch Sear scallops in oil on high heat for 90 seconds until charred; remove.
- The Architect Melt butter and sauté shallot, apple, and ginger until sweet.
- The Bloom Add pepper and a 20ml splash of cider; the sizzle will release the sharp ginger aromatics.
- The Marriage Add remaining cider; simmer until it reduces to a thick golden lacquer. Return scallops for 30 seconds.
- The Final Flourish Top with raw fresh parsley and a hit of lemon zest.
