- 400g King prawns
- 6 cloves Garlic (finely sliced)
- 50g Butter
- 1 tsp Chili flakes
- 0.5 tsp Turmeric
- 50ml Pastis or Pernod
- 1 Lemon (juiced)
Cooking Method
- The Scorch Heat a heavy pan; sear prawns in oil for 1 minute per side until pink; remove.
- The Architect Melt butter and sauté garlic until it turns a pale biscuit gold.
- The Bloom Add spices and Pastis; carefully ignite or boil for 1 minute until the raw alcohol evaporates, releasing the licorice oils.
- The Marriage Add lemon juice; return prawns and toss for 30 seconds until lacquered in the aniseed silk.
- The Final Flourish Top with raw fresh fennel fronds and extra lemon zest.
