Ingredients: 4 Fresh Peaches (halved), 100ml Water, 50g Sugar, 50ml Pernod or Pastis, 1 Star anise, 0.5 tsp Black peppercorns, Fresh Mint, Vanilla Ice cream...

  • 4 Fresh Peaches (halved)
  • 100ml Water
  • 50g Sugar
  • 50ml Pernod or Pastis
  • 1 Star anise
  • 0.5 tsp Black peppercorns
  • Fresh Mint
  • Vanilla Ice cream

Cooking Method

  1. The Swell Bring water and sugar to a boil until the sugar vanishes.
  2. The Bloom Add the star anise, pepper, and Pernod; boil for 2 minutes until the licorice oils bloom.
  3. The Marriage Place peach halves in the liquid; cover and simmer for 5 minutes until soft.
  4. The Swell Merge Remove peaches; boil the liquid until it reduces to a thick, glossy aniseed silk.
  5. The Final Flourish Drench the hot fruit in the silk; top with raw fresh mint.
