THE ANISEED FRUIT-SWELL
(Our Play on Peaches in Pernod Syrup)

- 4 Fresh Peaches (halved)
- 100ml Water
- 50g Sugar
- 50ml Pernod or Pastis
- 1 Star anise
- 0.5 tsp Black peppercorns
- Fresh Mint
- Vanilla Ice cream
Cooking Method
- The Swell Bring water and sugar to a boil until the sugar vanishes.
- The Bloom Add the star anise, pepper, and Pernod; boil for 2 minutes until the licorice oils bloom.
- The Marriage Place peach halves in the liquid; cover and simmer for 5 minutes until soft.
- The Swell Merge Remove peaches; boil the liquid until it reduces to a thick, glossy aniseed silk.
- The Final Flourish Drench the hot fruit in the silk; top with raw fresh mint.
