THE AJVAR-CHARRED BIRD
(Our Play on Balkan Roast Chicken)

- 1 Whole Chicken (spatchcocked)
- 100g Ajvar
- 2 tbsp Honey
- 50ml Olive oil
- 1 tsp Black pepper
- 1 tsp Smoked paprika
- 1 tsp Salt
Cooking Method
- The Bloom Whisk ajvar, honey, and spices with a tiny 15ml splash of vinegar to release the piquant pepper oils.
- The Coat Rub the chicken heavily with the red ajvar-silk; let sit for 30 minutes.
- The Scorch Roast at 200°C for 45 minutes until the skin is a blackened, sticky fire-shield.
- The Final Flourish Finish with a squeeze of raw lemon juice and fresh raw parsley matchsticks.
