- 250g Red onions (thin half-moons)
- 120g Gram flour
- 30g Rice flour
- 1 tsp Turmeric
- 1 tsp Chili powder
- 1 tsp Cumin seeds
- 1 tsp Salt
- 50–70ml Cold water
- 500ml Vegetable oil
Cooking Method
- The Soften Sprinkle onions with salt and let sit for 5 minutes to draw out moisture.
- The Coat Toss onions with spices and dry flours until every strand is coated.
- The Slurry Add water gradually until a sticky paste clings to the onions.
- The Lace Fry Drop loose bird's nest handfuls into 180°C oil; do not overcrowd.
- The Finish Fry for 2–3 minutes until golden and lacy.
