GUNPOWDER POTATO CUBES

Ingredients: 600g Baby potatoes (halved) or cubed Maris Piper, 3 tbsp Vegetable oil, 1 tsp Mustard seeds, 1 tsp Amchur, 1 tsp Chili flakes, 1 tsp Cumin powder, 0.5 tsp Black salt, Pomegranate seeds, Fresh lime...

Ingredients

  • 600g Baby potatoes (halved) or cubed Maris Piper
  • 3 tbsp Vegetable oil
  • 1 tsp Mustard seeds
  • 1 tsp Amchur
  • 1 tsp Chili flakes
  • 1 tsp Cumin powder
  • 0.5 tsp Black salt
  • Pomegranate seeds
  • Fresh lime

Cooking Method

  1. The Par-Boil Boil potatoes for 5–7 minutes until tender but firm; steam-dry for 2 minutes.
  2. The Scorch Heat oil and sizzle mustard seeds; add potatoes and fry for 12 minutes until golden.
  3. The Bloom Turn off heat; toss in the gunpowder dust so the residual heat toasts the spices.
  4. The Final Flourish Top with a squeeze of lime and fresh garnishes.
