Ingredients
- 600g Baby potatoes (halved) or cubed Maris Piper
- 3 tbsp Vegetable oil
- 1 tsp Mustard seeds
- 1 tsp Amchur
- 1 tsp Chili flakes
- 1 tsp Cumin powder
- 0.5 tsp Black salt
- Pomegranate seeds
- Fresh lime
Cooking Method
- The Par-Boil Boil potatoes for 5–7 minutes until tender but firm; steam-dry for 2 minutes.
- The Scorch Heat oil and sizzle mustard seeds; add potatoes and fry for 12 minutes until golden.
- The Bloom Turn off heat; toss in the gunpowder dust so the residual heat toasts the spices.
- The Final Flourish Top with a squeeze of lime and fresh garnishes.
